Allspice Dram

June 2024 attempt – Sous vide

  • 1/2 cup allspice
  • 1 cup Wray & Nephew Overproof
  • 1 tsp cassia
  • 1/3 vanilla bean
  • 1.5 cups water
  • 2/3 cup demerara sugar

Sous vide the allspice, rum, cassia, and vanilla bean for 2 hours at 140F. Strain. Make a syrup with the sugar and water. Mix together.

2022 attempt

  • 1/2 cup allspice berries
  • 2 1/2 cups navy-strength rum
  • 1 cup brown sugar 
  • 1/2 vanilla bean
  • 1 cinnamon stick

Toast and crush allspice berries, then soak in rum for two weeks. Mix with simple syrup (1:1) made with brown sugar, vanilla bean, and cinnamon.
